Almond Butter Oatmeal Energy Bites

Ingredients

1/2 c almond butter

1/2 c honey

2 Tbsp. melted coconut oil, let cool

1 tsp vanilla extract

1 c. oats

1/2 tsp cinnamon

1/2 c coconut flakes

1/2 c ground flaxseed

1/4 c dark chocolate chips

Directions

Place all ingredients in a bowl and mix until well combined.

Refrigerate for at least 20 minutes to let all ingredients get firm before rolling into balls.

Using your hands, form the mixture into about 1.5 tablespoon size balls. Set on a baking sheet lined with parchment paper. The batter can be difficult to work with, so be sure to remove jewelry.

Refrigerate again for about 30 minutes, and then store them in a reusable bag, or glass container.


TNK Tips

Store in the fridge and they last about a month.

A hand mixer is the easiest way to mix the batter.

Keep on hand for a pre-workout snack.

Spray your hands with non-stick spray, such as coconut oil or avocado oil, to roll mixture into balls more easily.

Double batter and store pre-made balls in freezer.
