Smashed Avocado and Balsamic Arugula Toast

Ingredients

2 slices bread (I prefer sourdough)

1 avocado

1 - 2 handfuls arugula

4 - 5 cherry tomatoes

3 tsp olive oil

1 tsp balsamic

Salt and pepper

Directions

First, toast your bread.

While your bread is toasting, toss arugula with 2 teaspoons of olive oil, balsamic, salt and pepper.

Cut the avocado in half and scoop into a bowl. Mash a teaspoon of olive oil, salt and pepper into the avocado.

Slice the cherry tomatoes to be able to layer on top.

To finish, spread the mashed avocado onto your toasted bread and then layer on the balsamic arugula and cherry tomatoes.

This is one of my go to lunches or snacks. It is loaded with healthy fats and very filling.

To kit it up a notch, sprinkle on crushed red pepper or chili powder. These spices also help your metabolism.
