Spicy Avocado Zoodles with Lime & Cilantro
Ingredients
1 zucchini, spiralized or sliced thinly
1 avocado
1/2 lime
1 tsp. chopped cilantro
1 Tbsp. extra virgin olive oil
1 tsp. crushed red pepper
Salt and pepper to taste
Directions
In medium bowl, mash avocado with half of the olive oil, 1/4 of lime juice, salt and pepper. Put zoodles on top and mix together. Mix in the rest of EVOO and lime. Top with a cilantro and crushed red pepper.
Tips
Serve with your favorite protein on top.
Make a double batch to bring as a healthy side for a party.
