Kale and Brussels Sprout Salad
Ingredients
1 bunch Kale, chopped
2 cups Brussel sprouts, thinly sliced
1 Red bell pepper, chopped
½ c Pecans, chopped
½ C Olive oil
2 lemons
1 Tbsp maple syrup
1 tsp Garlic
2 tsp Salt
1 tsp pepper
Directions
In a bowl, combine kale with juice from one of your lemons and a teaspoon of salt. Massage the juice and salt into the kale. The kale will condense down and turn a brighter green color.
In a small bowl, whisk together olive oil, juice from second lemon, maple syrup and seasonings.
Add your Brussels sprouts, bell pepper, pecans and dressing to your kale and mix together.

This is a great side to prep in advance for Thanksgiving. It will last in your fridge for a few days.
After Thanksgiving, add your leftover veggies and turkey on top for a delicious meal.
