Maple Glazed Carrots

Ingredients

1 lb baby carrots whole or cut

1 Tbsp olive oil

2 Tbsp coconut sugar

1 Tbsp maple syrup

1 tsp cinnamon

1 tsp ginger

1 tsp thyme

1 tsp garlic powder

1/2 c water

Directions

In a skillet over medium-high heat, add oil, coconut sugar, maple syrup, seasonings, and water. Bring to a boil, stirring occasionally.

Add carrots to skillet and let carrots, stirring occasionally, for 6-8 minutes or until tender.

Increase heat to high and cook until liquid is reduced, stirring occasionally, about 5-7 minutes.

Prepare in advance and store in oven safe dish to heat prior to eating.

Great as an appetizer or a side for Thanksgiving.
