White Bean Artichoke Dip
Ingredients
2 c. dry white beans
15 oz. canned artichoke hearts
2 tsp. za’atar seasoning
1/4 tsp. chili pepper
1 tsp. garlic powder
1 tsp. salt
1 tsp. pepper
1/2 tsp. garlic powder
1/2 c. extra virgin olive oil
Directions
Cook dry beans according to instructions. Drain artichoke hearts. Place cooked beans, artichoke hearts, seasoning and olive oil in food processor. Blend on high until beans and artichoke are broken down. To get desired texture, you may want to add more olive oil.
Tips
Use as an appetizer with veggies to dip.
Keep in the fridge as a snack throughout the week.
Make it a day or two in advance, and store in fridge.
