Citrus and Arugula Salad

For the Dressing

Ingredients

Juice from one orange

2 tsp. grated orange zest

2 tsp. dijon mustard

1 Tbsp. honey

1/2 tsp. salt

1/2 tsp. pepper

1/4 c. olive oil

Directions

Mix together all ingredients except olive oil. Once your seasoning has mixed in well, slowly whisk in olive oil.


For the Salad

Ingredients

1 orange

1 grapefruit

4 c. arugula

1/2 c. goat cheese crumbles

1/2 c. pecan pieces

Directions

For the citrus, cut a slice off both ends of the orange to reveal the flesh. Stand the orange upright on a cutting board and slice off the peel and pith in strips, following the contour of the fruit. Cut the orange in half crosswise, place each half cut side down, and thinly slice vertically to create half-moons. Repeat with the grapefruit.

Place arugula in a bowl, season with a little more salt and pepper. Pour half the dressing on top. Add the citrus slices and goat cheese crumbles. When ready to serve, drizzle with remaining dressing


Tips

Use dressing on any of your favorite salad combinations.

Add your favorite protein on top.
